South Africa produces some of the world’s finest sparkling wines. Endowed with quintessential terroir, progressive winemaking skills and meticulously incorporating the Methode de Traditional process to ensure an authentic double fermented sparkling wine of the finest quality. Whole bunch pressing is at the heart of the winemaking process, with only the first pressing, our uvee, used to make the various base wines. Diamant Classique selected wines have been awarded a number of international awards recognising its world beating qualities. Once bottled, the bottles are fermented and matured horizontally in cool, dark cellars for a minimum of twelve months. Our vintage wines stay on the lees to ensure much longer yeast contact time, depending on the style, vintage and special harvests. After riddling and disgorging, DC wines are left to mature on the cork for some time, to ensure integration and balance. This commitment to quality is evident in your glass every time a Diamant Classique cork is popped.
